My husband Tom loves to go to Hooter's. He swears it's only for the hot wings.

Yeah, I'm rolling my eyes, too.

But I have to admit, I'm starting to believe him. For the past few weeks he has been a man on a mission, trying to figure out how to duplicate the hot wings at home to save money. He has been gathering recipes online, scouring them for similarities and differences, jotting down notes and talking to himself like a mad scientist and finally, this weekend, he was ready to experiment. 

Unfortunately, he just assumed I had all of the ingredients he needed for the sauce…cayenne pepper, chili sauce, paprika (I actually usually have some, but somehow ran out)…as if they magically appear and last forever on the shelves.

So, creative as he is, he "winged" it (ha – get it?) And let me tell you…those wings were awesome! I couldn't feel my lips or my tongue for an hour afterward and I was sweating and my nose was running – that's how good they were. He grilled the drummettes first and then just tossed them in the sauce – no frying or breading at all, so they were even semi-healthy! Much, much better than Hooter's wings. He has no reason to go back to Hooter's now, right?

Yeah, I'm rolling my eyes, too.

    Can’t say I have ever been to Hooter’s, but I am a fan of great hot wings! Did you guys brine the wings before grilling them? They look awesome!

    Well, I'm not sure what "brine the wings" means…I'll never be a culinary artist like you!… but I don't think we (as in Tom) did. I think he just tossed them on the grill. But I'll check with him and let you know.

    Hehe…it makes them 10x better and is so easy to do…here it is in a nutshell:
    Get a container (1 Gallon plastic tea pitcher works great)
    Fill it 1/4 way full with hot water (hotter the better but not boiling)
    Add 1 cup of sugar
    Add 1 cup of Kosher salt (regular salt will do in a pinch [ha ha…made a pun])
    Stir until dissolved
    Add ice to the 1/3 full mark and stir (cools the liquid)
    add wings until it is full (or you run out of wings)
    Put in the fridge for 12-18 hours
    Pour off the water and grill as usual.
    You can also experiment with adding Tabasco or Cayenne pepper to the hot water so as the get the “hotness” to the core of the chicken even before grilling or saucing.

    It does sound easy except for the planning ahead part – that's what always messes us up! lol But I'm going to show this to Tom. Maybe he'll try it this way this weekend. I'll let you know!
